The rich nutritional content of spinach makes it an excellent choice as a base for salads. Spinach is a natural, low-calorie source of folic acid and vitamins A, C, and E, and it offers a generous and varied supply of antioxidants, which help fight heart disease. Plus, the flavonoids in spinach are thought to slow the cognitive decline that accompanies aging.
The Inflammation Angle
One of the most important recent discoveries about heart disease is that it can be caused in part by inflammation. DANIELLE'S COMMENTS: When I was training for my bodybuilding shows, I only ate spinach and broccoli. They are the best and most fibrous green vegetables, if you ask me. The more you poop, the more you lose. :)
